This is another dessert from my dabble with raw recipes and it is just delicious. The bananas give the pie the sweetness and the avocado makes it creamy. The crust is not as solid as a traditional baked one but still is very nice. The nutty taste combines well with the creamy filling. This is just so simple to make…blender in one hand, ingredients in the other and voila! Dessert!
You could make a low carb or gluten free pie cake and then use this raw filling too if you wanted a firmer pie crust…or whip up the filling for an alternative to chocolate mousse. Raw, vegan, dairy free, gluten free…the list goes on! Just ends being delicious and met with moans that I did not make a big enough one! This does make a small pie, double up for a larger one.
INGREDIENTS
1 1/2 cups walnuts
5 tblspns coconut oil
pinch salt
2 Avocados
3 bananas, ripe
1/4 cup cocoa powder
METHOD
- Blend the walnuts, salt and 2 tblspns of the coconut oil in food processor.
- Press into a pie dish and chill in the refrigerator.
- Place the avocados, bananas, cocoa powder and remaining coconut oil into a blender and blitz until smooth. You may need to scrape down the edges throughout the blitzing.
- Spoon the filling into the pie case and chill in the refrigerator for at least an hour (over night is better if you can wait).
- Eat and enjoy!
